BEST Lipton Onion Soup Meatloaf Recipe

Lipton onion soup meatloaf gets tons of flavor from the packet of Lipton onion soup mix. A family favorite recipe that’s incredibly delicious.

Ingredients

  • 2 eggs
  • 1 1/2 cups Italian seasoned breadcrumbs
  • 1 cup whole milk
  • 1 (2 oz) packet Lipton Onion Soup Mix (or any other onion soup mix)
  • 1/4 cup ketchup
  • 2 pounds medium ground beef
  • 1/4 cup ketchup
  • 1 Tablespoon packed light brown sugar
  • 8 strips bacon (optional, see notes)*
  • Freshly chopped parsley (optional, for garnish)

Directions

    Preheat the oven to 350F. Line a rimmed baking sheet with aluminum foil, then use non-stick cooking spray to lightly spray the surface.

    To a large mixing bowl, add the eggs, and beat. Add in the bread crumbs, milk, Lipton Onion Soup Mix, and ketchup. Mix until fully incorporated.

    Next, break up the ground beef into large chunks, and add it to the bowl. Use your hands to mix the meat with the wet mixture until it’s fully combined (it needs to be fully mixed, but it’s important to stop before you overmix it).

    Transfer the beef mixture to the center of the prepared baking sheet. Use your hands to form a loaf, making sure the meat is pressed tightly together to keep the loaf from separating while cooking. Also make sure to keep it an even height and thickness across the entire loaf (to ensure even cooking).

    Place the bacon strips over the long side of the meatloaf, then slightly tuck the ends under the loaf so it doesn't curl up while baking.

    To a small mixing bowl, add the ketchup and brown sugar. Mix to make a glaze. Spoon the glaze on top of the meatloaf, and evenly spread it over the entire loaf (make sure to coat the sides right down to the baking sheet).

    Place the meatloaf into the preheated oven and bake for 50-55 minutes, or until an instant read meat thermometer reads an internal temperature of 160F at the thickest point. Turn the broiler on and broil until the glaze starts to bubble and caramelize (about 3-4 minutes).

    Remove the meatloaf from the oven and let it rest for 10 minutes before slicing it into 1” thick slices. Garnish with fresh parsley and serve with desired sides.
