Preheat the oven to 400F/ 200C. Spray a sheet pan with cooking spray.
In a large bowl, add the ground chicken, egg, almond flour, grated parmesan cheese, olive oil, minced garlic, Italian seasoning, salt, and pepper. Mix just until well combined.
Shape 16 1 inch sized meatballs and place them in the prepared baking dish.
Bake for 18-20 minutes, or until meatballs are cooked through. Sprinkle with fresh parsley, then serve over zucchini noodles, cauliflower mash, or as you desire.
