These Easy Baked Keto Chicken Meatballs are low-carb, gluten-free, and keto-friendly, the perfect addition to any meal or snack. Perfect for meal-prep, these juicy meatballs are made with ground chicken, parmesan cheese, and fresh herbs for an incredibly delicious flavor.

Ingredients

  • 1 pound ground chicken 96% lean (or lean ground turkey)
  • 1 large egg
  • 1/2 cup almond flour
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon olive oil
  • 1 tsp minced garlic
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp Italian seasoning
  • 1 tbsp chopped parsley

Directions

    Preheat the oven to 400F/ 200C. Spray a sheet pan with cooking spray.

    In a large bowl, add the ground chicken, egg, almond flour, grated parmesan cheese, olive oil, minced garlic, Italian seasoning, salt, and pepper. Mix just until well combined.

    Shape 16 1 inch sized meatballs and place them in the prepared baking dish.

    Bake for 18-20 minutes, or until meatballs are cooked through. Sprinkle with fresh parsley, then serve over zucchini noodles, cauliflower mash, or as you desire.
