Ingredients

  • 2eggs
  • ¾ cupsugar
  • ½ cupoil
  • 1 tspvanilla
  • 1 ½ cupsflour
  • 1 ½ tspbaking powder
  • ¼ tspsalt
  • ½ cupmilk
  • 1 ½ cupsdiced strawberries
  • 2 tbspall purpose flour (for coating the diced strawberries)

Directions

    Preheat oven to 350 degrees. Prepare a 9x5 inch loaf pan with non-stick spray or oil.

    Combine the sugar, milk, oil, eggs, and vanilla in a medium bowl. Wisk until combined.

    In a separate bowl, combine flour, baking powder, and salt.

    Add dry ingredients to wet ingredients and stir together until just combined. You don’t want to overmix the batter!

    Add the 2 tbsp. flour to the diced strawberries and gently toss.

    Add the strawberries to the batter and gently fold together.

    Pour the batter into the prepared loaf pan and bake in preheated oven for 55 - 60 minutes or until golden brown and a toothpick inserted in center of the bread comes out clean.

    Remove from oven. Place bread in pan on a cooling rack.

    Set timer for 5 minutes. Loosen edges of bread with a knife and carefully turn out bread. Allow bread to continue cooling until completely cooled.
