Homemade date paste needs just 2 ingredients and takes 15 minutes to make (5 if you have a high speed blender!). This healthy substitute for sugar works well in drinks, desserts and baking.

Ingredients

  • 1tightly packed cup dates, pitted (about 5oz or 150g)
  • ¾ cuphot, recently boiled water

Directions

  1. 1

Add dates to a bowl. Cover with hot water and soak for 10 minutes.

  2. 2

Place dates AND soaking water in high speed blender. (NOTE: If your blender's instructions say not to blend hot liquids, wait until hot water has cooled before transferring contents.)

  3. 3

Blend for about one minute (turn power to high as soon as possible - dates will break down faster and get less stuck in blender). Scrape down sides of jug as needed.

  4. 4

Stop blending when you have a smooth paste. Pour into glass jar and refrigerate until needed.
