Ingredients

  • 1 lbitalian sausage (mild or spicy)
  • 1 tbspolive oil
  • 1 smallonion, diced
  • 3 clovesgarlic, minced
  • 4 cupschicken broth
  • 2 cupsheavy cream
  • 1 packagefresh cheese tortellini
  • 2 cupsfresh spinach (or kale)
  • 1 tspitalian seasoning
  • ½ tspcrushed red pepper flakes (optional)
  • salt and pepper to taste
  • parmesan cheese, for garnish
  • fresh parsley, for garnish

Directions

    Heat olive oil in a large Dutch oven or soup pot over medium heat. Add the sausage, breaking it into crumbles, and cook until browned. Drain excess fat if necessary.

    Add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds.

    Pour in the chicken broth and bring it to a gentle simmer. Stir in Italian seasoning, red pepper flakes (if using), salt, and pepper. Simmer for 5-7 minutes.

    Add the fresh tortellini directly to the broth and cook for 3-5 minutes until tender.

    Reduce the heat to low and pour in the heavy cream. Stir well, then add the spinach. Cook for 1-2 minutes until wilted.
