Preheat the oven to 350 degrees. Line a 8x8 square baking pan with parchment paper.
In a small saucepan over medium heat, add the butter and stir until foamy and browned. If the butter doesn’t start to brown after a few minutes, slowly increase the heat until it browns. Be careful not to burn it!
Immediately take the butter off the heat and add to a large mixing bowl. Add in the brown sugar and whisk until combined. Add the banana and whisk into the mixture until combined. Add in the vanilla, peanut butter and egg and whisk again until smooth.
Add the flour, salt, and baking soda and stir until just combined. Do not over mix.
Fold in the chopped peanut butter cups until evenly mixed throughout.
Pour the mixture into the baking pan, ensuring it’s evenly distributed throughout the pan, and bake for about 30-35 minutes until the edges are golden brown and the center is no longer jiggly.
Let cool for at least 20 minutes (sorry) then cut into bars and serve!
