Ingredients

  • 1 cupquinoa, rinsed
  • 2 cupslow-sodium vegetable broth
  • 1lemon, juiced
  • ¼ cupred onion or shallot, finely chopped
  • 1 canchickpeas, drained and rinsed
  • 1 cupcherry tomatoes, halved
  • 1heaping handful baby spinach
  • ½ cupolives, sliced
  • 3 tbspolive oil (divided)
  • 1 tspdijon mustard
  • optional: feta
  • optional: mint
  • optional: parsley

Directions

    In a medium pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat. Cover the pot, and simmer for 15 minutes or until the quinoa is fluffy and the liquid is absorbed.

    In a small bowl, whisk together 2 Tablespoons of olive oil, mustard, lemon juice and salt. Set aside.

    In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the red onion and cook until softened for about 1 minute. Add the quinoa, chickpeas, cherry tomatoes, baby spinach, and olives, stirring occasionally until spinach is wilted and chickpeas are heated; about 3-5 minutes.

    Turn off the heat. Drizzle over the lemon sauce, and stir to coat evenly. Garnish with feta cheese and chopped herbs and serve warm.
