Heat oil, cook onion and garlic 2-3 minutes until translucent.
Add sweet potatoes, cook 10 minutes until starting to soften.
Add turkey, break apart and cook 5-7 minutes until browned.
Add paprika, cumin, salt and pepper.
Add pepper and spinach, cook 3-4 minutes until tender. Garnish with parsley.
