Ingredients

  • 1 lb (450g) cremini or button mushrooms, cleaned and trimmed
  • 3 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh thyme or rosemary, chopped (or 1 teaspoon dried)
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Lemon wedges (optional, for serving)

Directions

  1. 1

Preheat your oven to 400°F (200°C).

  2. 2

In a large bowl, toss the cleaned mushrooms with melted butter, minced garlic, olive oil, thyme (or rosemary), salt, and pepper until the mushrooms are well coated.

  3. 3

Spread the mushrooms in a single layer on a baking sheet. Ensure they are not overcrowded to allow for even roasting. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the mushrooms are golden brown and tender.

  4. 4

Once roasted, remove the mushrooms from the oven and sprinkle with fresh parsley. Serve immediately with a squeeze of lemon juice if desired.
