Souper Rice is a flavorful side dish that comes together in just 10 minutes. Using just four pantry staples, the risotto-like texture melts in your mouth.

Ingredients

  • 1 (10.5 ounce) can cream of chicken soup (unsalted or 98% fat free)
  • 1 1/2 cups low-sodium chicken broth
  • 1 1/2 cups uncooked instant white rice
  • 1/2 cup grated Parmesan cheese

Directions

    In a medium saucepan, whisk the cream of chicken soup and chicken broth over medium-high heat. Bring the mixture to a boil.

    Stir in the instant white rice and Parmesan cheese, and mix well until combined.

    Cover the saucepan and remove it from the heat. Let the rice mixture stand for 5-8 minutes, or until the rice is cooked and most of the liquid has been absorbed.
