Hamburger Soup is a quick and easy meal filled with vegetables, lean beef, diced tomatoes, and potatoes. This soup recipe can be made ahead of time and freezes well.

Ingredients

  • 1 poundlean ground beef
  • 1onion (diced)
  • 2 clovesgarlic (minced)
  • 2 mediumpotatoes (peeled and diced)
  • 3 ½ cupsbeef broth
  • 28 ouncescanned diced tomatoes (with juices, 1 can)
  • 10 ¾ ouncescondensed tomato soup (1 can)
  • 2 teaspoonsworcestershire sauce
  • 1 teaspoonitalian seasoning
  • 1bay leaf
  • salt and black pepper (to taste)
  • 3 cupsfrozen mixed vegetables (or fresh chopped vegetables)

Directions

    Brown onion, ground beef and garlic until no pink remains. Drain any fat.

    Add potatoes, broth, tomatoes, tomato soup, Worcestershire sauce, seasoning and bay leaves. Simmer covered 10 minutes.

    Stir in vegetables. Simmer 15-20 minutes or until potatoes are tender.
