Preheat the oven to 350 F (177 C). Line two large baking sheets with parchment paper.
Whisk the flour, cornstarch, baking soda and salt together until well combined.
In a large mixing bowl, beat the butter and sugar together on medium speed until light and fluffy. This takes about 2-3 minutes.
On low speed, beat in the eggs and vanilla extract one at a time until well combined. Scrape the bottom and sides of the bowl as needed.
On the lowest mixing speed or by hand, stir in the dry ingredients until just combined. Fold in 1 ½ cups of chocolate chips. Reserve the remaining ½ cup for topping the cookies before baking.
Using a medium (2 tbsp) cookie scoop, drop cookie dough onto a lined baking sheet about 2 - 3 inches apart. Top with the remaining ½ cup of chocolate chips.
Bake at 350 F for 10 - 12 minutes or until the edges of the cookies are lightly golden brown. Cool on the hot baking sheet for 3 minutes. Transfer to a cooling rack to cool to room temperature and enjoy!
