This Blackstone chicken fried rice recipe is easy and so delicious. Perfect for a summer weeknight meal.

Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 2 chicken breasts, diced
  • 2 tablespoons Japanese bbq sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp cracked black pepper
  • 2 eggs
  • 1 small onion, diced
  • 1 1/2 cups frozen peas and carrots, thawed
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Directions

    Preheat the Griddle: Preheat your Blackstone griddle to medium heat.

    In a medium bowl, add diced chicken, Japanese bbq sauce, garlic powder, salt and pepper. Stir until chicken is coated.

    Cook the Chicken: Drizzle some cooking oil on the griddle. Cook until fully cooked and browned.

    Cook the Vegetables: Add a bit more oil if needed, then add the minced garlic and cook for about 30 seconds until fragrant. Add the peas and carrots, and diced onion.

    Cook until they are heated through.

    Cook the Eggs: Push the vegetables to one side of the griddle and crack the eggs onto the griddle. Scramble the eggs until fully cooked.

    Combine Ingredients: Add the cooked rice to the griddle. Drizzle the soy sauce, oyster sauce, and sesame oil over the rice. Mix everything together (chicken, vegetables, eggs, and rice) until well combined. Cook for a few more minutes until the rice is heated through and slightly crispy.

    Finish and Serve: Add the chopped green onions, mix everything one last time, and serve hot.
