Pasta with Skillet Salmon, Mushrooms and Parsley (Greek Island of Crete)

Salmon in a Skillet with Mushrooms and Parsley served on pasta in under 30 minutes!

Ingredients

  • 1/2 cup extra virgin olive oil
  • 1 medium onion, shredded
  • 2 cloves garlic, finely chopped
  • 1 cup fresh parsley, chopped
  • 4 salmon steaks (1 ½ - 2 pounds), cut in large cubes
  • 1 cup diced tomatoes
  • 1 cup thinly sliced mushrooms
  • 1 tsp sweet chili flakes
  • Salt and pepper, to taste
  • 1 pound dry spaghetti
  • Shredded Parmesan cheese, to taste

Directions

    Heat olive oil in deep frying pan. Add onion and sauté for 2 minutes. Add garlic. parsley and a pinch of salt and pepper. Sauté for another minute. Begin cooking spaghetti according to package directions.

    Add salmon, tomatoes, mushrooms and chili flakes. Simmer for 10 - 15 minutes (until salmon is done and mushrooms are tender). Salt and pepper, to taste.

    Top cooked pasta with vegetables and salmon. Sprinkle with cheese and serve. 624kcal
