Baby spinach makes a wonderful salad for smoked salmon. This one-bowl recipe combines a lemony vinaigrette with sliced radishes, cucumber, and scallions along with the greens and fish for a quick and easy main or side.

Ingredients

  • 3 tablespoonsextra-virgin olive oil
  • 2 tablespoonsfresh lemon juice
  • 2 tablespoonchopped dill
  • kosher salt and freshly ground pepper
  • black pepper
  • 8 cupsbaby spinach (7 ounces)
  • 6 ouncesthinly sliced smoked salmon, cut crosswise into 1/2-inch ribbons
  • 1 mediumenglish cucumber—peeled, halved lengthwise, seeded and thinly sliced
  • 4radishes, halved and thinly sliced
  • 2scallions, thinly sliced

    In a large bowl, whisk the olive oil with the lemon juice and dill and season with salt and pepper. Add the spinach, smoked salmon, cucumber, radishes, and scallions to the bowl and toss well. Transfer the salad to plates and serve.
