Ingredients

  • 1 lbitalian sausage (mild or spicy)
  • 1 tbspolive oil
  • 1 smallonion, diced
  • 2garlic cloves, minced
  • 1 largecarrot, diced
  • 2celery stalks, chopped
  • 1can crushed tomatoes
  • 4 cupschicken broth
  • 1 tspitalian seasoning
  • ½ tspred pepper flakes (optional)
  • 9 ozrefrigerated cheese tortellini
  • 2 cupsfresh spinach or kale
  • salt and pepper, to taste
  • grated parmesan cheese, for garnish

Directions

    Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.

    In the same pot, sauté onion, garlic, carrot, and celery until softened.

    Stir in crushed tomatoes, chicken broth, Italian seasoning, and red pepper flakes. Bring to a simmer.
