This easy Korean cucumber salad is a refreshing and flavorful side dish, ideal for summer meals.

Ingredients

  • 2 English cucumbers, thinly sliced
  • 1 teaspoon salt
  • 2 green onions, finely chopped
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon gochugaru (Korean red pepper flakes)
  • 1 clove garlic, minced
  • 1 teaspoon toasted sesame seeds

Directions

    Place cucumber slices in a colander and sprinkle with salt. Toss to coat and let sit for 10 minutes.
