A cosy classic, this slow cooker beef stew has delicious French flavours and can be prepped in just 20 minutes.
Heat 1 tablespoon of the oil in a large non-stick frying pan over high heat. Add half of the beef and cook, turning occasionally, for 8 minutes or until golden. Use tongs to transfer to the bowl of a slow cooker. Repeat with the remaining beef.
Heat the remaining oil in the frying pan. Add the onion and carrot. Reduce heat to medium. Cook, stirring often, for 5 minutes or until tender. Add the garlic and cook, stirring, for 1 minute or until aromatic. Pour the wine into the pan and simmer for 3 minutes or until reduced.
Pour the onion mixture into the slow cooker. Add the French onion soup mix, thyme sprigs and 500ml (2 cups) water. Stir to combine. Cover and cook on HIGH for 3 hours 40 minutes or until the beef is tender.
Combine the cornflour with 1 1/2 tbsp cold water. Add to the slow cooker. Stir until combined. Cover and cook on HIGH for 20 minutes or until the beef is very tender. Season. Serve, sprinkled with extra thyme, with mash and steamed green beans.
