This cheesecake tart is creamy, smooth, tangy and delicious! The whipped cream really makes this light and airy - less dense than a normal cheesecake. The cinnamon flavor from the crust is yummy and adds another depth of flavor to the tart. The strawberry lime coulis is what makes this really special. It's sweet with hints of lime. It takes this heavenly dessert to a whole other level.

Ingredients

  • CRUST
  • 12 small oatmeal iced cookies
  • 12 small snickerdoodle cookies
  • 6 tablespoon(s) butter, melted
  • 2 teaspoon(s) cinnamon
  • 2 tablespoon(s) sugar
  • CHEESECAKE TART CENTER
  • 1 3/4 cup(s) heavy cream, whipped
  • 1 1/2 stick(s) cream cheese (12 oz.)
  • 1/2 cup(s) Cool Whip
  • 4 teaspoon(s) vanilla extract
  • 3 tablespoon(s) sugar
  • 1/3-3/4 cup(s) powdered sugar
  • COULIS
  • 10 ounce(s) frozen strawberries
  • 3 tablespoon(s) lime juice
  • 1/2 cup(s) sugar
  • 1 pint(s) strawberries

Directions

    Crush cookies in a Ziploc bag. Place in a bowl with butter, sugar, and cinnamon.

    Press cookies into a 9-inch tart pan. Place in a freezer for 15 mins.

    In a saucepan, add frozen strawberries, lime juice, and sugar. Cook for 10 mins. Strain and set aside to cool.

    In two separate bowls, whip cream into stiff peaks adding 2 tsp vanilla and 1/3 cup powdered sugar.

    In another bowl, cream together cream cheese, Cool Whip, 2 tsp vanilla, and 3 tbsp sugar.

    Add cream cheese mixture to whipped cream. Whip for 2-3 mins. Add powdered sugar as needed for sweetness.

    Pour mixture into tart pan, set in freezer for 20-30 mins. Then fridge for another 35-40 mins or until set (1 hour - 1 1/2 hours). Serves with fresh strawberries and coulis.
