Red Pepper Spread, Green Parsley Pesto & Burrata Sandwich

If you were to try one sandwich from me then i would ask you to try this, this duo is so underrated and truly is a match made in heaven Want more vegetarian sandwich recipes? We love a fig grilled cheese and a chickpea "tuna" sandwich.

Ingredients

  • 3 red peppers
  • 1/2 cup walnuts
  • 1/4 cup extra virgin olive oil
  • 2 minced garlic cloves
  • 2 tablespoons pomegranate molasses
  • 1 teaspoon aleppo pepper
  • 1 teaspoon salt
  • 1/2 cup parmesan cheese
  • 1/2 cup extra virgin olive oil
  • 3 garlic cloves
  • Salt & pepper
  • 2 balls of fresh burrata
  • 2 slices bread
  • 2 tomatoes, sliced
  • Sprinkle of Aleppo pepper
  • 2 cups fresh arugula leaves
  • 1/2 red onion, thinly sliced
  • 4 tablespoons balsamic glaze
  • Salt & pepper

Directions

    Wrap red dell peppers in aluminium foil & roast them in the oven on 450F degree for 20-25 min. Remove and let it cool down for 5-10 min, peel skin & remove seeds.

    Add all ingredients to a food processor or a mortar & process until you have a good paste.

    Mix all ingredients in blender until well combined.
