This cucumber salad is made with a sweet and tangy vinegar dressing. It’s crunchy, flavorful, and the perfect side dish for summer meals.

Ingredients

  • ¼ cuphot water
  • 3 tablespoonssugar (add more or less to taste)
  • ½ teaspoonground black pepper
  • ½ teaspoonsalt
  • ½ cupapple cider vinegar
  • 2 largecucumbers, peeled and sliced thin
  • about ¼ cup chopped or sliced onion, yellow, red or sweet

    In a large bowl, combine the hot water and sugar. Stir until the sugar dissolves. Add the cucumbers and onion. Stir to combine.
