Air Fryer Sweet Chili Chicken and Brussels Sprouts

Spicy chili ginger chicken breast with crispy brussels sprouts.

Ingredients

  • 12 oz Brussels Sprouts, stemmed and halved*
  • 1 Tablespoon (16g) Olive Oil
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper
  • 1 lb Boneless Skinless Chicken Breast, diced
  • 1 Tablespoon (16g) Chili Oil**
  • 2 teaspoon Ground Ginger
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Chili Powder
  • 1/2 teaspoon Kosher Salt
  • 1/4 cup (60g) Sweet Chili Sauce, plus more for serving

Directions

    Cut the stems off the brussels sprouts before cutting them in half and tossing in the olive oil, salt, and pepper.

    Add the brussels sprouts to an air fryer basket and cook at 400ºF for 10 minutes.

    While the brussels sprouts are in the air fryer, coat the diced chicken breast in the chili oil before adding the ground ginger, garlic and chili powder, and salt. Stir to fully coat the chicken.

    After the brussels sprouts have cooked for 10 minutes, add the chicken breast to the basket and gently stir everything together.

    Air fry for an additional 10-12 minutes at 400ºF until the chicken reaches an internal temperature of 160ºF to 165ºF. Stir halfway through for even crisping on the brussels sprouts.

    Add the 1/4 cup of sweet chili sauce and stir everything together. Air fry or broil for an additional 1-2 minutes to caramelize the sauce. Serve with rice, toasted sesame seeds, lime wedges, and additional sweet chili sauce, if desired.
