Ingredients

  • 2 lbs bone-in lamb chops
  • 4 medium Yukon Gold potatoes, diced
  • 3 medium carrots, sliced
  • 2 sweet onions, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh thyme (or 1 teaspoon dried)
  • 4 cups low-sodium beef broth
  • 2 bay leaves
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Directions

    Heat olive oil in a large pot over medium-high heat. Sear lamb chops until golden brown on all sides.
