
This one pan gnocchi and sausage skillet offers a flavorful mix of fried potato gnocchi, crumbled breakfast sausage, tart tomatoes, and melted mozzarella.
Check instructions on gnocchi packaging; some brands require boiling while others can be used directly in a recipe. Follow any guidance on package for proper preparation.
In a large skillet, warm olive oil over medium-high heat. Add gnocchi and cook until sides are lightly golden, about 5-7 minutes. Remove gnocchi from skillet and set aside.
Add breakfast sausage to skillet, then cook and crumble until browned, about 8-10 minutes. Remove sausage and set aside. Drain grease, leaving about 1 teaspoon in skillet.
Add diced tomatoes, garlic, Italian seasoning, salt, and pepper to skillet. Mix well and cook for 7 minutes, stirring occasionally.
Pour in heavy cream and return gnocchi and sausage to skillet. Toss ingredients together, then top with mozzarella cheese and garnish with oregano (optional). Continue to heat skillet until cheese has melted. Tip: you can cover skillet for 1-2 minutes to speed up cheese melting.
Remove skillet from heat. Let gnocchi and sausage rest for 5 minutes.
Serve as desired.
