Easy Cheesy One Pot Ham & Pasta Dish

Make this One Pot Cheesy Ham & Vegetables Pasta and have Dinner in no time! This easy one pot recipe can be prepped and ready in less than 30 minutes!

Ingredients

  • 2 cloves garlic (minced)
  • 1/2 cup diced onion
  • 2 Tablespoons olive oil
  • 2-3 cups of cubed ham
  • 32 ounces chicken broth
  • 8 ounces mini seashell pasta (uncooked)
  • 2 Teaspoons oregano (dried)
  • 2 Teaspoons basil (dried)
  • 1/2 teaspoon ground black pepper
  • 1/2 cup frozen corn
  • 1/2 cup frozen peas and carrots
  • shredded Parmesan cheese for topping

Directions

    In a large skillet or pot, add garlic, onion and olive oil. Heat on medium for about 3-5 minutes or until the onion begins to soften and become translucent.

    Add ham, broth, pasta, oregano, basil, pepper, and vegetables and stir to combine. Heat over medium high heat until it begins to boil. Reduce heat to simmer, cover and heat for about 15-20 minutes, stirring occasionally, until pasta is cooked to your liking.

    Serve with shredded Parmesan cheese on top.
