Preheat the oven to 350 F.
Spread the nuts out over a pan, making sure they're not touching.
Bake the nuts for 7 to 8 minutes until they are light brown and fragrant.
Let the nuts cool, then chop them (roughly).
Combine the sugar, evaporated milk, butter, vanilla, and salt.
Heat the sugar mixture until it reaches 235 to 240 F. (250 F will give you a praline with the consistency of hard candy.)
Stir in the nuts, then continue to stir as you cook the sugar/nut mixture for 2 minutes.
Pour spoonfuls of the praline mixture onto a lined cookie sheet.
If desired, you can sprinkle the pralines with flaked salt.
Let the pralines cool completely, then store them at room temperature in an airtight container.
