This version of the beloved Mexican sandwich uses creamy refried black beans and a mixture of vegan mayonnaise with the sauce from canned chipotles en adobo.
Ingredients
½ cupsvegan mayonnaise (preferably just mayo brand; may substitute regular mayonnaise)
2 tablespoonssauce from a can of chipotles en adobo, or more as needed (may substitute your favorite chipotle-flavored hot sauce)
1 tablespoonextra-virgin olive oil
1 mediumyellow onion, chopped
3 clovesgarlic, minced
1 tablespoonground ancho chile powder
1 teaspoonground cumin
3 cupscooked or canned no-salt-added black beans (from two 15-ounce cans, drained and rinsed)
1 ½ cupshomemade or no-salt-added vegetable broth (see related recipe)
