  • 2 poundsbeef chuck roast, cut into 1.5-inch cubes
  • 4 cupspotatoes, peeled and cut into chunks
  • 3 cupscarrots, peeled and cut into large pieces
  • 1 largeonion, chopped
  • 3 clovesgarlic, minced
  • 2 tablespoonstomato paste
  • 4 cupsbeef broth
  • 1 tablespoonworcestershire sauce
  • 1 cupred wine (optional)
  • ¼ cupall-purpose flour
  • 2 tablespoonsolive oil
  • 2bay leaves
  • 1 teaspoonfresh thyme (or 1/2 teaspoon dried thyme)
  • 1 ½ teaspoonssalt
  • 1 teaspoonblack pepper

    Pat the beef dry and coat evenly in flour.

    Heat olive oil in a large Dutch oven. Brown the beef in batches on all sides, then remove and set aside.
