Best Gnocchi Bake with Chicken and Bacon recipe

Creamy, cheesy and packed with delicious chicken and bacon, this gnocchi bake really is the best.

Ingredients

  • 500g gnocchi
  • 1 tbsp olive oil
  • 1 brown onion, finely diced
  • 150g bacon, sliced
  • 200g button mushrooms, sliced
  • 30g butter
  • 1 clove garlic, crushed
  • 500ml cream
  • 1 cup cooked chicken, shredded
  • 40g parmesan, grated
  • 1 cup grated cheese

    Preheat oven to 180C. Cook gnocchi according to packet instructions. Drain and set aside.

    In a large frypan, heat oil over medium heat. Cook onion for 3-4 minutes until soft. Turn up the heat a little and add bacon. Cook, stirring, for a further 2 minutes. Add the mushrooms and butter and continue to cook for 3 minutes. Add garlic and cook for 1 minute. Pour in cream. Bring to the boil, then reduce heat and simmer for 5 minutes until reduced slightly. Add chicken and half of the parmesan. Remove from heat and stir to combine.

    Place gnocchi in the base of a medium baking dish. Pour over cream mixture. Stir to combine, then top with grated cheese and remaining parmesan. Bake for 25-30 minutes until bubbling and golden.
