A rustic, cozy blackberry cobbler with a flaky homemade crust, bursting with sweet-spiced berries—perfect for savoring the taste of summer.

Ingredients

  • 3 cupsblackberries
  • ⅓ cupunbleached all purpose flour
  • ⅓ cupbrown sugar
  • 1 tbsplemon juice
  • 1 tspvanilla extract
  • 1 pinchnutmeg
  • 1 pinchcinnamon
  • 1 pinchsea salt
  • 1 largeegg
  • 1 tbspapple cider vinegar
  • 5 tbspcold water
  • 3 cupsunbleached all purpose flour
  • 1 tspbaking powder
  • 1 tspsea salt
  • 1 ⅓ cupunsalted cold butter (cubed)

Directions

    In a medium bowl, gently mix the blackberries, flour, brown sugar, lemon juice, vanilla, nutmeg, cinnamon, and salt until the berries are coated. Pour into a greased pie dish and dot the top with small pieces of butter.

    In a small bowl, whisk together the egg, apple cider vinegar, and cold water. In a large bowl, mix flour, baking powder, and salt. Add the cubed butter and use your fingers to work it into the dry ingredients until the texture resembles coarse crumbs. Pour in the egg mixture and knead gently until a soft dough forms.

    On a lightly floured surface, roll out the dough to about 1/4 inch thick. Slice into long strips to form a rustic lattice or simply layer across the filling however you like. Place dough strips along the edge of the pie and over the blackberry filling.

    Bake at 350F for about 30 minutes, or until the crust is golden and the filling is bubbling.
