Ingredients

  • 4boneless, skinless chicken breasts
  • 1 cuplong-grain white rice
  • 2 cupschicken broth
  • 1 cupheavy cream
  • 1 cupgrated parmesan cheese
  • 1 smallonion, finely chopped
  • 3 clovesgarlic, minced
  • 2 tablespoonsolive oil
  • salt and pepper to taste
  • fresh parsley, chopped (for garnish)

Directions

    Prepare the Chicken: Season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add chicken and brown on both sides until golden. Remove from the skillet and set aside.
