Using lemon cake mix as their base, amazingly tasty Lemon Crinkle Cake Mix Cookies are super easy to make. Loaded with fabulous lemon flavor, there's no way something that tastes this good should be this easy to make!
In a large mixing bowl, stir together dry cake mix and flour. Add oil, eggs, lemon juice, and lemon zest; stir until the mixture comes together to form a dough.
Cover and refrigerate for 20 minutes to make dough easier to work with for rolling.
Use your hands to roll dough into 1-inch balls. Place powdered sugar in a small bowl and roll each dough ball in powdered sugar, coating it completely.
Place sugar-covered dough balls on an ungreased cookie sheet about 2 inches apart. Bake at 350℉ for 9-11 minutes or until set.
Cool on pan for 1 minute; remove to a cooling rack and cool completely.
Store tightly covered in an airtight container.
1 lemon works perfectly for this recipe. -- Zest the lemon first before cutting into it. Then once zested, cut it in half to juice it.
The dough will be a bit sticky. Don't worry about rolling it into perfect balls to roll into the confectioners' sugar. -- Just get it roughly into balls, and then shape it up a bit more once coated in confectioners' sugar.
