This Italian Grinder Salad is a low carb version of the TikTok viral grinder sandwich! Made with crunchy lettuce, savory deli meats, provolone and parmesan cheese, and a creamy, tangy dressing ... this fresh and colorful salad is full of different textures and flavors that make it absolutely irresistible.  

Ingredients

  • 1 headiceberg lettuce, finely chopped
  • ½red onion, thinly sliced
  • ⅓ cupchopped banana peppers
  • 1 cupchopped grape tomatoes
  • ¼ lbsalami, chopped
  • ¼ lbpepperoni, chopped
  • ¼ lbturkey, chopped
  • ¼ lbprovolone cheese, chopped
  • ¼ cupgrated parmesan cheese
  • ½ cupmayonnaise
  • 2 tbspred wine vinegar
  • 1 tspbanana pepper juice
  • 1 tspgarlic powder
  • 1 tspdried oregano
  • ½ tspsalt
  • pepper, to taste

Directions

    First add the iceberg lettuce, red onion, banana peppers, grape tomatoes, salami, pepperoni, turkey, provolone cheese, and parmesan cheese to a large mixing bowl.

    Next in a small bowl or jar combine the mayo, red wine vinegar, banana pepper juice, garlic powder, oregano, and salt until smooth. Season with black pepper to taste.

    Pour the dressing over the lettuce mixture. Toss the salad thoroughly until all salad ingredients are combined.
