This lemon icebox pie recipe is made with just 5 ingredients, including cream cheese, sweetened condensed milk, lemon zest, and lemon juice.

Ingredients

  • 8 oz.plain cream cheese, room temperature
  • 114 oz. can sweetened condensed milk
  • 2 tbsp.lemon zest (about two lemons)
  • ¾ cuplemon juice (fresh-squeezed is best, but nellie & joe’s and natalie’s both have great bottled versions)
  • 1homemade or storebought graham cracker crust
  • whipped cream or frozen whipped topping, thawed, to serve

Directions

    Prepare the pie filling: In a large bowl, combine cream cheese, sweetened condensed milk, lemon zest, and lemon juice. Using an electric mixer on medium, mix until smooth.

    Add filling to crust: Spread into pie crust and smooth top. Refrigerate for 7 hours (or until set).

    Add topping and zest: Once the pie is set, pull it out and top it with a layer of homemade whipped cream , and sprinkle with additional lemon zest, if using.
