These simple Baked Sweet Potato Slices are lightly seasoned and ready in just 30 minutes. It’s a healthy and delicious side dish that’s flexible and pairs well with anything!

Ingredients

  • 3 mediumsweet potatoes (sliced into 1/2" rounds)
  • 2 tbspolive oil
  • salt and pepper (to taste)

    Place the sweet potato slices into a bowl, then drizzle with olive oil, sprinkle with salt and pepper and stir to combine.

    Line the sweet potatoes onto your baking sheet in a single layer, ensuring they’re not overlapping. Drizzle any extra olive oil from the bowl over the potatoes.
