
An easy to make Greek inspired chicken that marinates in lemon and spices and is then cooked and baked with fresh parsley and some feta cheese!
Whisk together the 1 Lemon Juice & Zest, 1/4 C.Extra Virgin Olive Oil, 3 Garlic Coves, 1 Tsp. Dried Oregano, 1/2 Tsp. Smoked Paprika, and 1/2 Tsp. Salt.
Cut the chicken into thin cutlets and place into a ziplock with the marinade.
Marinate in the fridge for 30 minutes.
Preheat the oven to 375 degrees F.
Heat a skillet over medium-high heat and give it a light spritz of non-stick spray. Add the chicken to the skillet and cook for 3-4 minutes, flip, and cook for another 3-4 minutes.
Place the chicken onto a baking sheet and top each piece with the 1/4 C. fresh parsley and 1/4 C. feta divided evenly.
Transfer to the oven to cook for 5-10 minutes or until the chicken is cooked through to temperature and the feta is soft and l a little melty.
Once done, remove from the oven and serve right away with a lemon edge for garnish!
