Ingredients

  • 2 cupscooked sushi rice
  • 2 tablespoonsrice vinegar
  • 1 teaspoonsugar
  • 1 tablespoonsesame oil
  • 1 tablespoonfurikake
  • chopped shiso (optional)
  • 8 ouncesfresh salmon (sushi-grade)
  • 2 tablespoonskewpie mayo
  • 1 teaspoonsoy sauce
  • 1 teaspoonyuzu juice
  • sugar
  • sriracha (optional)
  • 1ripe avocado
  • 1 tablespoonyuzu juice
  • 1 teaspoonkewpie mayo
  • ½ teaspoonhoney
  • salt
  • wasabi (optional)
  • ½ cupshredded mozzarella
  • parmesan or cheddar (optional)
  • roasted nori sheets (cucumber slices, pickled ginger)

Directions
