This retro 1980s recipe starts with Bisquick, and it has a devoted fan base for good reason. Don't let the name fool you: Sad Cake is cheerfully sweet, chewy, aalso if nd delicious.

Ingredients

  • baking spray
  • ½ cupsalted butter, melted
  • 2 cupspacked light brown sugar (or 1 [1 lb.] box)
  • 4 largeeggs, at room temperature
  • 1 ½ tsp.vanilla extract
  • 2 cupsall-purpose baking mix (such as bisquick original pancake & baking mix)
  • 1 cupchopped pecans

    Preheat oven to 350°F. Coat a 9- x 13-in. baking dish with baking spray.

    Whisk together melted butter, sugar, eggs, and vanilla until combined. Add baking mix and stir until mixture is smooth. Fold in chopped pecans.

    Pour mixture into prepared baking dish. Bake until toothpick or cake tester inserted into the center comes out clean, 25-30 minutes. Let cool completely in the pan, about 1 hour. Cut into squares and serve.
