This creamy Dijon chicken is a restaurant-quality meal you can easily make at home! Since it's made in one pan, this recipe is quick and fuss-free.

Ingredients

  • 4 boneless, skinless chicken breasts (pounded to even thickness)
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 3 tablespoons Dijon mustard
  • 1 tablespoon whole-grain mustard (optional, for texture)
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 cup grated Parmesan cheese
  • 3 cups fresh spinach leaves
  • Salt and black pepper (to taste)
  • Fresh parsley (chopped, for garnish)

    Season the chicken breasts generously with salt, pepper, and paprika (if using).

    Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and sear for 4–5 minutes on each side or until golden brown and cooked through (internal temperature of 165°F). Remove from the skillet and set aside.

    In the same skillet, melt butter over medium heat. Add the diced onion and cook until translucent, about 3–4 minutes. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

    Pour in the chicken broth, scraping up any browned bits from the skillet (deglazing the pan adds flavor). Let the broth simmer for 2–3 minutes to reduce slightly. Stir in the heavy cream, Dijon mustard, whole-grain mustard (if using), and thyme. Whisk until smooth.

    Lower the heat and simmer the sauce for 3–4 minutes, stirring occasionally, until it thickens slightly. Stir in the Parmesan cheese and let it melt into the sauce. Taste and adjust the seasoning with salt and pepper.

    Once the Parmesan has melted into the sauce, add the fresh spinach. Stir gently until the spinach wilts, about 2–3 minutes.
