
Steet corn smash chicken tacos feature ground chicken smashed on a corn tortilla and fried until crispy, topped with a zesty street corn slaw.
Start by getting your prep out of the way: mince your garlic, mince the jalapeno, zest your lime, crumble the cotija cheese, and mince the cilantro.
Next fry your corn in a pan of medium high heat with a drizzle of oil until slightly charred. Remove from the pan into a bowl.
Add sour cream, mayo, garlic, jalapeno, zest and juice of the lime, paprika, chili powder, and salt & pepper to the bowl. Give it a mix and set the street corn slaw aside.
Next mix the ground chicken with the garlic powder, onion powder, paprika, and salt & pepper. Spread a thin layer of chicken over the corn tortilla, fry in a pan on medium heat for a few minutes on each side. Remove once chicken has a nice sear and is cooked through.
Add a couple spoonful's of the corn slaw to the chicken taco, some crumbled cotija cheese, fresh cilantro, and more lime juice if desired. Enjoy!
