
The secret to crispy sweet potato fries is soaking them in cold water and giving them a light coating of cornstarch before baking!
Cut the sweet potatoes into slices and then matchsticks (try to make them as even as possible). Place them in a bowl of iced water for 30 minutes.
Preheat the oven to 415 F and line two baking sheets with parchment paper.
Drain the sweet potato matchsticks and pat them dry.
Place them in a plastic zipper bag or bowl and add the cornstarch. Shake to cover, and place them on the baking sheet.
Mix the herbs, spices, salt, and pepper in a small bowl.
Drizzle the oil over the sweet potato matchsticks and sprinkle the spice mix over them. Transfer half to the other baking sheet. Toss and bake for 15 mins.
Flip and bake for another 10-15 minutes or until crispy. Serve immediately.
