American chop suey is a classic recipe that’s a combination of tender macaroni, hearty ground beef, and bright green bell peppers, all coated in a savory, umami-packed tomato sauce. It’s an easy one-pot meal that’s perfect for weeknights.

Ingredients

  • 2 tablespoonsolive oil
  • 1 pound85% lean ground beef
  • 1 mediumyellow onion, chopped
  • 1 mediumgreen bell pepper, chopped
  • 3 clovesgarlic, minced
  • 3 tablespoonstomato paste
  • 1 teaspoonitalian seasoning
  • 1 teaspoonkosher salt
  • ¾ teaspoongarlic powder
  • 1can diced tomatoes, undrained
  • 1can tomato sauce
  • 1can condensed beef consommé (such as campbell’s)
  • 1 cupwater
  • 1 tablespoonworcestershire sauce
  • 2 ½ cupslarge elbow macaroni (8 1/2 ounces)

Directions

    Brown the beef: Heat the oil in a large Dutch oven over medium-high heat until shimmering. Add the ground beef and cook, stirring and breaking up the beef into smaller pieces, until browned, about 5 minutes.

    Add the aromatics: Stir in the onion, bell pepper, garlic, tomato paste, Italian seasoning, salt, and garlic powder and cook until fragrant and the tomato paste darkens in color, about 5 minutes.

    Make the sauce: Stir in the diced tomatoes, tomato sauce, beef consommé, water, and Worcestershire sauce. Cover with a lid and bring to a boil over high heat, about 3 minutes.
