
The next time you need a side dish to serve with family dinner, try this rich and creamy million dollar potato casserole. It's loaded with cheesy goodness!
Preheat the oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with cooking spray.
In a large mixing bowl, blend the cream cheese until smooth. Scrape the bottom and sides of the bowl and mix in the cream of chicken soup, cottage cheese, sour cream, onion powder, garlic powder, salt, and pepper.
Stir until well combined. Taste and adjust the seasoning as needed.
Gently mix in the shredded cheese and diced potatoes until evenly combined. Then, spread the potato mixture into the prepared baking dish.
In a small bowl, mix the crushed Ritz crackers with the melted butter. Sprinkle the buttery cracker mixture evenly over the potatoes.
