This Tater Tot Breakfast Casserole is so simple to prepare and full of flavor. It's delicious!

Ingredients

  • 1 32 ounce bag of Tater Tots (We use Oreida)
  • 1 lb of smoked sausage (cut into quarter slices)
  • 1 10.5 ounce can of Campbells Cheese Soup
  • 1 cup of milk
  • 1/2 cup of chopped onion
  • 1/2 cup of chopped green pepper
  • 1 tablespoon of minced garlic
  • 8 eggs
  • 1/4 th teaspoon of black pepper
  • 1 cup of sharp cheddar cheese (shredded)
  • 1 cup of colby jack cheese (shredded)

Directions

    Preheat oven to 350 degrees. Spray a 9X13 baking dish and set aside. In a skillet over medium heat, saute onion, green pepper, smoked sausage and minced garlic. Cook until onion and green pepper are soft. Remove from heat. In a large bowl combine tater tots, sausage mixture, both types of cheeses, mix together and pour into baking pan.

    In separate bowl whisk together eggs, cheddar soup, milk and black pepper. Once combined pour over tater tot mixture.

    Bake on 350 uncovered for 65-75 minutes until eggs are completely cooked.
