Ingredients

  • 8 ouncesrotini noodles
  • ¾ cupchopped english cucumber
  • ¾ cupshredded carrot
  • 1yellow bell pepper (chopped)
  • ½ cupdiced red onion
  • 5 ouncessliced olives
  • 14 ouncescherry tomatoes (halved)
  • 3 ouncesregular or turkey pepperoni (quartered)
  • 6 ouncesfresh mozzarella (cubed)
  • 2 ouncesfresh basil (thinly sliced)
  • ⅓ cuplight caesar dressing
  • ⅓ cuplight greek dressing
  • ½ teaspoonsalt
  • ½ teaspoonblack pepper
  • ¼ cupshredded parmesan cheese

Directions

    Bring a large pot of water to a boil. Add pasta to the boiling water and cook it according to the package instructions until it is al dente. Drain and rinse with cold water.

    Toss until well combined. Taste and adjust flavors as desired.

    Transfer to a serving dish or large bowl. Garnish with additional fresh basil and parmesan cheese if desired.
