Copycat Organic White Bean Kale Avocado Salad from Erewhon

Ingredients

  • 6 cups kale (de-stemmed and chopped into small pieces)
  • 1 15 oz can of white beans (drained and rinsed)
  • 1 large avocado (cut into cubes)
  • 1/3 cup sunflower seeds or pepitas (they use both but seems v unnecessary)
  • 1/4 cup hemp seeds
  • Sea salt & black pepper
  • 1 lemon (juiced)
  • 1 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 1/4 cup extra virgin olive oil
  • Pinch of salt

    Prep your kale and place into a large bowl. Make your dressing by whisking together all ingredients and toss into the kale. Add remaining ingredients and serve!
