A pint of melted ice cream becomes a light and airy dessert in this one-bowl cake recipe.
Make the cake Preheat oven to 350°F. Lightly coat a 8.5- x 4.5-inch loaf pan with cooking spray. Whisk together flour, baking powder, and salt in a medium bowl. Whisk together granulated sugar and coconut oil in a large bowl until combined; add melted ice cream, and stir until fully incorporated. Using a rubber spatula, fold flour mixture into ice cream mixture until just combined. Pour batter into prepared loaf pan.
Bake the cake until a wooden pick inserted into center comes out clean, 30 to 35 minutes. Let cool 15 minutes in loaf pan on a wire rack. Remove cake from loaf pan, and let cool completely on wire rack, 1 hour, 30 minutes to 2 hours.
While cake is cooling, make the icing Sift powdered sugar into a medium bowl. Add cream, spices, and salt; whisk until smooth, adding additional cream, 1 teaspoon at a time as needed, to reach desired consistency. Once cake is cooled, spread icing evenly over top . Slice and serve.
