
Ground Turkey Stir Fry is an easy weeknight dinner recipe loaded with bell peppers, broccoli, green onions and cashews all cooked in a sweet and savoury stir fry sauce seasoned with fresh garlic and ginger.
Add the ground turkey to a large skillet or wok over medium heat. Sauté the turkey for 5-7 minutes until fully cooked, using a spatula to break the meat into small chunks. Drain the fat, if necessary, and remove the turkey from the pan.
Add the olive oil to the skillet and turn the heat up to medium-high. Add the broccoli florets and peppers. Stir fry the vegetables for 4-5 minutes, until crisp-tender, stirring frequently.
Return the cooked turkey to the pan, along with the grated ginger and minced garlic, and stir well to combine. Turn the heat back down to medium.
Add the soy sauce, honey, rice vinegar, water, cornstarch and red pepper flakes to a small bowl or mason jar. Whisk or shake well, until the sauce is fully combined and no lumps of cornstarch remain.
Add the sauce to the skillet and stir for 1-2 minutes until the sauce has thickened enough to coat the back of a spoon.
Garnish the stir fry with green onions and cashews.
