This light and refreshing, easy, potluck favorite features corn, black beans, red peppers, cucumber and cilantro.

Ingredients

  • 1 cancorn or 1 ½ cups frozen corn, thawed
  • 1 canblack beans, rinsed and drained
  • ½ cupchopped cucumber
  • ½ cupchopped sweet red pepper
  • ¼ cupchopped onion, red onion or green onion
  • ¼ cupminced fresh cilantro or parsley
  • ⅓ cupred wine vinegar
  • ¼ cupolive oil
  • ½ teaspoonsalt
  • ¼ teaspoongarlic powder
  • ⅛ teaspoonpepper

Directions

    In a large bowl, combine the first six ingredients.

    In a small bowl, whisk together vinegar, oil and seasonings. Pour desired amount over salad and stir to coat.
