Melt 1 tablespoon butter in a saucepan over medium heat. Place the almonds in the pan and stir constantly until they reach a light brown color. Place the almonds in a bowl and set aside.
Take the remaining 2 tablespoons of butter and place in a medium saucepan. On low heat, add the onions and cook until softened.
Add the rice and dried cranberries. Stir until well combined with the onions.
Add chicken broth and Increase heat to medium. When it comes to a boil, reduce heat to low and cook until liquid is absorbed, about 18 minutes.
Remove from heat and let stand for 5 minutes. Stir in the rest of the almonds and the parsley. Salt and pepper to taste.
